Elderberries: How to Use Them Safely
Elderberries are a traditional fruit for jam and syrup. They need careful handling.
Do not eat raw elderberries. Raw berries, leaves, stems and roots can make you sick. Always cook ripe berries well, and remove the stems.
Know your plant
Only use berries from a plant you can identify with confidence. Some look-alike berries are poisonous, and red-berried elder should be avoided.
Using them
- Simmer well for syrup
- Cook into jam or jelly
- Use dried berries only in recipes that cook them
